At Forni, our Bianca starts with a creamy white sauce spread over hand-stretched dough. Fresh mozzarella melts over the sauce. The pizza bakes at 800 degrees until the edges of the cheese brown and the crust chars. Then baby arugula — fresh, peppery, and green — goes on top while the pizza is still hot. Thin shavings of aged parmesan finish it off.
The Arugula Factor
Arugula is the ingredient that makes the Bianca work. Its bitterness and peppery bite cut through the richness of the white sauce and melted mozzarella. Without it, the pizza would be one-dimensional — rich on rich on rich. The arugula provides the contrast that keeps every bite interesting.
