A regular oven tops out around 500. Ours hits 800. At that temperature, the crust blisters in minutes — leopard-spotted char on the outside, soft and airy inside.
This is not a conveyor belt operation. Each pizza goes into the stone oven by hand, gets rotated by hand, and comes out when it's right. That's what wood-fired means.

Produce arrives daily. Mozzarella is hand-pulled. Sauces are made from scratch — not from a bag, not from a can. We're a small kitchen, and that's a feature: we don't have a warehouse of frozen inventory. What you eat was prepped that day.
